Fresh truffles typically cost about US$300–$600 per pound for summer and Burgundy truffle, US$800–$2,000 per pound for black winter (Périgord) truffle, and US$4,000–$6,000 per pound for white Alba truffle at retail. Dried truffle slices cost a fraction of that per plate: wholesale dried slices run from roughly US$65 per pound for Chinese truffle to over US$1,000 per pound for European black winter truffle. Prices below were last reviewed in October 2026 and move with the harvest.
Truffle Price Per Pound: Fresh Truffle at Retail
Retail prices for fresh truffles in the US vary by species and season. The figures below are typical ranges per pound, as published by The Pricer for the 2024–2025 season.
| Truffle | Season | Typical retail price per pound |
|---|---|---|
| White Alba (Tuber magnatum) | Oct–Jan | US$4,000–$6,000 |
| Black winter / Périgord (Tuber melanosporum) | Dec–Mar | US$800–$2,000 |
| Summer / Burgundy (Tuber aestivum / uncinatum) | Jun–Sep | US$300–$600 |
First-class white truffles can price much higher in years when rainfall is poor and harvests shrink. Fresh truffle also loses aroma within days, so the price per pound is only part of the real cost: much of what you buy is lost before it reaches the plate.
Dried Truffle Slices: Wholesale Price Per Kg and Per Pound
Most commercial kitchens use dried slices for everyday work. These are typical wholesale ranges we see in Canada, with a US$ per pound conversion at C$1.45 per US$1.
| Dried truffle slices | Wholesale per kg | Approx. per pound |
|---|---|---|
| Chinese truffle (Tuber indicum) | C$200–$450 | US$65–$140 |
| Summer truffle (Tuber aestivum) | C$400–$800 | US$125–$250 |
| Burgundy truffle (Tuber uncinatum) | C$600–$1,200 | US$190–$375 |
| Black winter truffle (Tuber melanosporum) | C$1,500–$3,500 | US$470–$1,100 |
| White truffle (Tuber magnatum), when available | C$4,000–$12,000 | US$1,250–$3,750 |
These are indicative ranges, not a quote, and rates and harvests move them. Our own dried truffle slices are priced at C$269 per kg, about US$85 per pound at the same rate, and sit in the Chinese-truffle tier. Checkout is in Canadian dollars.
What Drives the Price
Six things explain almost all of the spread:
- Species: the largest factor by far. The same word, "truffle", covers a roughly 30-fold price range.
- Fresh or dried: fresh is priced for a few days of shelf life; dried slices last months and are portionable.
- Grade: whole, even slices cost more than broken pieces and flakes.
- Harvest year: weather decides yields, and prices follow scarcity.
- Origin: Italian and French lots command a premium over the same species from elsewhere.
- Supply chain: each reseller layer adds margin, which is why importing direct matters at volume.
Use these as a sanity check. A quote that calls Tuber melanosporum slices C$400 per kg is summer-truffle money, and a "white truffle" at C$1,500 per kg should raise questions about species. Our Chinese vs European truffle guide explains how to verify.
Which Truffle Is Worth Paying For?
Match the truffle to the job:
- Shaved fresh at the table: pay for fresh black winter or white truffle.
- Visible on the plate: black winter dried slices.
- Pasta, risotto, eggs: summer truffle is the usual cost-conscious choice.
- Butter, sauces, stuffing, banquet volume: Chinese truffle, where truffle supports the dish rather than starring in it.
A kitchen that buys one species for every job overpays on some dishes and under-delivers on others.
When to Buy
Fresh black truffle peaks and is most expensive in winter; summer truffle is cheapest late summer; white truffle is priciest in autumn. Dried slices are steadier through the year, and late winter to spring usually gives the best window to restock black truffle after the season peak. Storage matters: sealed and away from light, slices keep their aroma for months. See our storage guide.
Frequently Asked Questions
How much does 1 lb of truffles cost?
It depends on the species. At US retail, one pound of summer truffle costs about US$300–$600, black winter truffle US$800–$2,000, and white Alba truffle US$4,000–$6,000. Dried slices of Chinese truffle cost roughly US$65–$140 per pound wholesale.
How much does a black truffle cost per pound?
Fresh black winter (Périgord) truffle typically retails for US$800–$2,000 per pound in season. Dried black winter truffle slices wholesale for roughly C$1,500–$3,500 per kg, about US$470–$1,100 per pound.
Why are truffles so expensive?
Truffles grow underground in partnership with specific trees, cannot be farmed reliably, and must be found, usually by trained dogs, at the right moment of ripeness. Harvests swing with weather, and fresh truffle loses aroma quickly, so supply is small and time-sensitive.
How much do dried truffle slices cost?
Wholesale dried truffle slices range from about C$200 per kg for Chinese truffle to C$1,500–$3,500 per kg for European black winter truffle and more for white truffle. Our dried truffle slices are C$269 per kg.
Are dried truffles cheaper than fresh truffles?
Per plate, yes. Dried slices avoid the short shelf life and trimming loss of fresh truffle and are portionable. Per kilogram, a dried product of the same species can cost more than fresh because it is concentrated, so compare cost per portion, not per kilo.
