Our dried morels come from the established morel-growing regions of Yunnan and Fujian, China. Every lot is graded by cap size, checked for integrity and dryness, and packed before it ships to our Ontario warehouse. How grading works
All four grades are the same morels from the same origins. The only difference is cap size and how intact the caps are. Smaller grades cost less per kilogram and suit dishes where the morel is chopped; larger grades are for whole-cap presentation. How to rehydrate dried morels
Rinse briefly, then soak in warm water for 20 to 30 minutes until pliable. Lift the morels out rather than pouring, so any grit stays in the bowl. Strain the soaking liquid through a fine sieve and use it in the sauce. Morels must be cooked before serving. More detail in how to rehydrate dried morels.
Storage
Keep sealed in an airtight container in a cool, dry, dark place. Once opened, reseal after each use and keep away from humidity and strong odours. Properly stored dried mushrooms hold quality for 12 months or longer.
